Born in Paris, a cave à manger is part-wine shop, offering grab-and-go bottles, and part-restaurant offering simple, home-cooked small plates in a rustic atmosphere. Regulars and passersby alike pop in for a pour and a bite, some leave with bottles in tow, some leave buzzed and ready for the night. These hole-in-the-wall, half-retail-half-restaurants vary in sophistication, but are consistent in emphasizing their wines, by glass and by bottle; the food is designed to compliment, not overshadow. Our interpretation of the now popular Parisian dining-style will feature a live cheese and charcuterie counter at the community table, an extensive offering of by-the-glass pours.
